Red Lentil Stew

A delicious and nutritious red lentil stew with a fusion of flavors and ingredients.

Ingredients

  • 30 ml olive oil
  • 1 onion
  • 2 cloves garlic
  • 2 carrots
  • 2 tomatoes
  • 5 g ground red pepper
  • 5 g turmeric
  • 5 g black pepper
  • 2.5 g fenugreek
  • 200 g red split lentils
  • 500 ml vegetable broth
  • 500 ml water
  • 15 g parsley
  • 30 g nutritional yeast

Instructions

  1. Heat olive oil in a large pot or deep pan, add chopped onions and minced garlic, and sauté until translucent.
  2. Add chopped carrots and cook for 3-4 minutes.
  3. Stir in chopped tomatoes, and add 1 teaspoon each of ground red pepper, turmeric, and black pepper, and 1/2 teaspoon fenugreek.
  4. Add rinsed red split lentils, vegetable broth, and water, then bring to a boil and reduce to a simmer.
  5. Cook for 15-20 minutes, until lentils are soft and stew has thickened.
  6. Remove from heat, and stir in chopped parsley and nutritional yeast.
